Shrimp & Grits
With Andouille Sausage and 3 Cheese Grits
Shrimp & grits has always been a favorite dish of mine. Every time I’m at a restaurant that serves it, I get it. I have had great versions and I’ve had some less than tasty versions too. Either way, I’ve always found that I enjoy it WAY more when I make it myself though.
I used my Ninja Foodi to make this dish, but since I only used the sear/saute setting you can easily do this on the stovetop as well. I just like the ability to set the temp and not have to worry about it getting too hot. Do whatever works for you!
Ingredients
- 1 pack Andouille sausage
- 1 pack shrimp; large, pre-cooked, peeled & deveined
- 1 cup instant grits
- 1/4 cup lime juice
- 1 1/2 cup cheddar cheese, shredded
- 1/2 cup smoked gruyere, shredded
- 1/2 cup parmesan cheese, shredded (not pictured, I ran out)
- 1/3 cup heavy whipping cream
- 1 cup red onion, diced
- 1/2 cup Sherry cooking wine
- 1 cup & 1/4 cup chicken stock; divided
- 1/3 cup celery, diced
- 1 tbsp diced jalapeno; fresh, a little goes a long way
- 1 green onion, diced
- 2 tbsp fresh cilantro cut chiffonade; and more for plating
- 1 green bell pepper; diced
- 1 red bell pepper; diced
- 1 orange mild pepper, diced
- 1 yellow mild pepper, diced
- 2 TBSP softened unsalted butter
- 1/4 cup whole garlic cloves
- 3-4 TBSP extra virgin olive oil
- 4 cups of water (not pictured)
Instructions
Step 1: Using the sear/saute setting on HIGH; heat olive oil; add red onion, celery, both bell peppers, both mild peppers, garlic & jalapenos; saute for about 5 minutes, stirring frequently.
Step 2: Add Sherry and 1 cup of chicken stock, simmer for 8-10 minutes or until liquid cooks down.
Step 3: Add butter, stir to combine until melted; add andouille sausage, salt & pepper and continue to saute for an additional 7-8 minutes or until sausage and veggie mix begins to brown.
Step 4: Add shrimp, lime juice, cilantro, salt & pepper; saute additional 8-10 minutes, stirring frequently, then set Ninja Foodi to KEEP WARM and close lid. **Tip remove the tails of the shrimp before adding them to the pot, I forgot to do it this time, it’s such a pain to do it while you eat!**
Step 5: In a medium saucepan, bring 4 cups of water to a boil, add 1/4 cup chicken stock and then add grits, stir, cover with the lid and turn heat to low, simmer for 5 minutes stirring occasionally.
Step 6: Remove from heat and add heavy cream, stir to fully combine; add cheeses and stir again.
Step 7: PLATE IT AND ENJOY!
This is one recipe I could eat every week and never tire of! This is the recipe that I’ve perfected to my liking over the years, but feel free to change it up. Add more jalapeno for more heat! Use Old Bay Seasoning if that’s more your style. Use different cheeses too! Pepperjack is a favorite of mine as well! No matter how you choose to serve it up, have fun with it!
