Savory Scones
Ham, Cheddar, Smoked Gruyere & Green Onion
My mom was kind enough to send us some of the Easter ham they made last week. I have been striving to use what I had left in my fridge. After making ham and eggs for breakfast for three days, I had enough to make puffs yesterday and scones today! Needless to say, my husband has LOVED breakfast this week!
I am a firm believer that a good scone recipe should be in the “essentials” category of your recipe box! This is a quick dish that can be mixed up quickly when you have unexpected guests coming over or when you just want a quick little “sum’n, sum’n”!!
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup (1 stick) of butter COLD and cubed
- 1 teaspoon Kosher salt, coarse
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 2 large eggs, one for the recipe one for egg wash
- 1/2 cup milk (I used 2%)
- Savory ingredients equaling roughly 1 cup diced
- I used Ham, Cheddar, Smoked Gruyere, & Green Onions
Instructions
Step 1: Preheat oven to 400*F and prepare the baking sheet. I used foil today because I recently ran out of parchment. If you use foil, mist the surface with a little cooking spray (just as a preventative to sticking).
Step 2: In a large bowl, combine dry ingredients: flour, sugar, salt, baking powder, and baking soda.
Step 3: Add butter to the flour mix and use your fingers to blend the butter into the mix. The mixture should look like crumbled damp sand.
Step 4: Whisk wet ingredients in a separate bowl and then combine to the flour/butter mixture, mixing with your hands just enough to incorporate it.
Step 5: Carefully fold the ham, both cheeses and green onion (or whatever savory ingredients you picked) into the mixture.
Step 6: Pour mixture out on a lightly floured surface and knead lightly until dough is cohesive.
Step 7: Shape into a circle and cut triangles like a pizza. I use a bench scraper (also known as a dough cutter) to get a sharp mess-free cut.
Step 8: Arrange scones on a sheet pan about 2 inches apart, egg wash and sprinkle with coarse Kosher Salt.
Step 9: Place in oven on the middle rack. Bake for 13-15 mins or until the edges are browned.
Step 10: No glaze! I just paired these with a dollop of sour cream and more green onion. Pair your savory scones with whatever fits with your ingredients!
