Peanut Butter, Banana & Chocolate Chip Pound Cake
This peanut butter banana and chocolate chip pound cake is a recent family favorite! It’s light and fluffy while still rich in flavor! It seemed as soon as this one was cut, it was devoured. This is my favorite flavor combination. I hope you enjoy this recipe as much as we have.
Ingredients
- 1 3/4 Cup All Purpose Flour
- 3/4 Teaspoons Baking Soda
- 2 1/4 Teaspoons Lemon Juice
- 1/2 Teaspoon Kosher Salt, course
- 1/3 cup Butter unsalted, cubed & softened
- 1/3 Cup Creamy Peanut Butter
- 2/3 Cup Granulated Sugar
- 2 Large Eggs
- 1 Cup Mashed Bananas ripened, roughly 2-3 over-ripened banana
- 1 1/2 Cups Chocolate Chips
Instructions
Step 1: Combine flour, baking soda, sugar, and salt and set aside, add lemon juice to mashed bananas and mix to combine, set aside.
Step 2: Cream softened butter and peanut butter together, if your butter is still a little too stiff because (like me) you forgot to take it out of the fridge until you were gathering your ingredients, use a whisk to whip the peanut butter and butter together and fully combine them. Then whisk in the eggs.
Step 3: Add 1/4 cup of the flour mixture and fold to combine, then add a scoop of the banana and lemon juice mixture and fold to combine.
Step 4: Continue to alternate until all flour and banana have been fully incorporated.
Step 5: Gently fold in the chocolate chips, leaving just shy of a handful of chips for use later.
Step 6: Pour batter into 10in loaf pan and sprinkle the remaining chocolate chips across the top
Step 7: Bake at 350*F for 50-55 minutes, lightly cover with foil for the last 15 mins to prevent over browning; once done place on cooling rack and allow to cool completely before slicing.

This recipe was quick and simple enough for bakers of all levels! Chelsea is already asking if she can make it again! She’s gonna have to wait for our bananas to ripen, but I’m confident she will be able to do this one with minimal supervision.
