KQ: Day Two
Chicken a la Orange served with Sauteed French Style Green Beans and Roasted Little Creamy Potatoes

Welcome to Day Two of Kitchen Quarantine! Since we did two sweet baked goods yesterday, we are going to make a gourmet meal for two tonight! This dish hits the spot for every flavor profile you might be craving. There’s a sweet citrus glaze a-top a perfectly seared chicken drumstick, savory garlic french-style green beans, and lightly salted crispy-on-the-outside but smooth-and-creamy-on-the-inside little potatoes. Ingredients
- Two (2) lbs – chicken drumsticks
- 1 lb – French-style green beans
- 1 lb – Little creamer potatoes
- Salt & Pepper – as needed
- Olive Oil – as needed
- 3 cloves – garlic, minced
- 1 1/2 cup – chicken broth
- 1/4 cup – white cooking wine
- Orange juice from one medium-sized orange
- Zest from one orange
- 1/3 cup – brown sugar
- 2-3 TBSP Cornstarch – mix with 2-3 TBSP water for slurry *Don’t mix until you need it*
Instructions
Step 1: Wash and prep the vegetable sides: Cut the ends of the green beans on a bias (diagonally). We’re going to leave the potatoes whole since they are small (almost bite-sized). Toss green beans in olive oil and melted butter, salt, pepper, and 2 TBSP minced garlic and set aside. Then toss the potatoes in olive oil and coarse sea salt. Set aside.
Step 2: **THIS STEP IS OPTIONAL** I like to make a cleaner presentation so I prefer to cut and clean the end of the bone. To do this, using a sharp knife cut the skin through to the bone near the joint end. Rotate the knife fully around the bone. Using a clean dry towel, grasp the nub of the bone we want to remove, hold tightly and pull. This will reveal a cleaned bone tip.
Step 3: Using a paper towel, pat drumsticks dry of any liquid and place in large container or Ziploc bag. This is for tossing the drums so use what’s best for you. Season chicken with salt and pepper and shake it up!
**Note I like using the bag because I can manipulate it in my hands and make sure every inch is coated in the seasoning. And it doesn’t hurt that it’s an easier clean-up!
Step 4: Set your Ninja Foodi or Instant Pot to sear on HIGH. Once ready, add olive oil to the bottom of the pot. Place the drumsticks in the pot “presentation side” down. Rotate drumsticks to sear on each side – approximately 3-4 mins.
Step 5: Remove drumsticks and set aside to deglaze the pot. Keep the sear/saute setting on HIGH. Add chicken broth and white wine to the pot and using a wooden spoon, scrape the bottom. Add orange juice and brown sugar, stir until all sugar is dissolved, about 3 minutes.
Step 6: Add orange zest and turn off the pot. Return the drumsticks to the pot and add the metal roasting rack that came with your Ninja Foodi to the pot above them, add potatoes. Use the pressure cooking setting on HIGH for 8 minutes. Allow to naturally release for another 5 minutes.
Step 7: Remove the pressure cooking lid and add green beans to the top rack. Set on Air Fry setting at 375*F for 5 minutes.
Step 8: Remove sides and drumsticks, set aside in a warm place. Set pot to the sear/saute setting and add the cornstarch slurry (cornstarch and water) and using a silicone-coated whisk, whisk constantly until sauce has thickened.
Step 9: Time to plate it! I plated on a serving platter for my husband and I; that being said you can plate individually too. To do this: arrange potatoes on the center of the plate, lean green beans against potatoes and add the drumstick to the top. Spoon roughly 1 TBSP of glaze over the top of the drumstick and sprinkle a dusting of orange zest. ENJOY!
This was a simple recipe and an even easier clean-up! I’ve had my Ninja Foodi since Valentine’s Day this year and I have even gotten rid of my microwave! So glad I made 8 pieces. I started to only make 5 (I haven’t liked chicken much lately) but boy was I wrong about this one!! 😂🤤 My husband is willing to marry me all over again all because of this amazing orange chicken!
