Peaches and Cream Danish and Homemade Humble Peach Jam

We Made It!! – Except not yet…

Today is our last day of this ten day challenge! Governor Brian Kemp has extended the Shelter-In-Place until April 30th, 2020, which means an additional seventeen days of self-quarantining. The kids are doing better than I expected with self-starting in their school assignments. The hubs is managing to stay productive while working from home. I have been keeping myself busy with #MakeAndBake (ing) #AllTheThings. The dogs (and guinea pig) are happy, healthy and active! We may be separated from our friends and family, and psychologically, this has proven to be difficult for a “social butterfly” like myself; however, we seem to be thriving individually on our own intellectual levels. The kids are reading more, playing outdoors more (which could just be that Spring has sprung and it’s warmer out) and I’ve noticed an increase in their creative thinking! They’re building “forts” outside and playing in the mud. They’re excited about working in our garden and I am excited for them to be a part of it all!

Today, Chelsea and I are going to make peaches and cream danishes and homemade peach jam too! I’m starting to see her interest in the culinary arts peak and my heart can’t help but swell with pride. I know her true passion is horses and all things horseback riding, but I will cherish the memories of our Kitchen Quarantine baking adventures for years to come and even though she either won’t eat what we make or she does and spits it out, I hope she cherishes these moments too.

Okay.. Okay… Let’s get to the sweeter stuff!

I am making the peach jam in my Ninja Foodi today! If you have an Instant Pot you can make it the same way! Let’s get started with the jam first!

Mise En Place – Peach Jam
Humble Peach Jam Ingredients
  • 30 ounces of frozen peaches, thawed
  • 1 1/2 cups granulated sugar
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
Instructions

Step 1: Thaw peaches completely, drain any liquid and remove 5 “pretty” slices of peaches to use later when creating danish. If you’re not making the danish no need to remove the slices.

Step 2: Put peaches, sugar, and lemon juice in pot and stir thoroughly to mix well. Using the pressure cooking setting, set on HIGH for 12 minutes and and allow to naturally release the pressure for an additional 10-12 minutes afterwards.

Step 3: Remove lid and carefully stir and mash the peaches in the mixture. Set machine to the sear/saute setting on HIGH while continuing to stir and mash the peaches.

Step 4: Continue to simmer until almost all water has evaporated, roughly 8-10 minutes, be sure to continue stirring during this time as the contents could burn on the bottom of the pot. It’s important to keep it moving.

**NOTE: This mixture will still look thin after 10 minutes or so, contents will thicken as it cools.**

Step 5: Once all extra liquid seems evaporated, turn off sear/saute function and carefully remove pot from machine. **Note the contents and the pot itself are VERY hot at this point. You will need to exercise caution when removing the pot from the machine.**

Step 6: Once mixture has cooled slightly, stir in vanilla and store in airtight glass jars in the refrigerator for up to 4 weeks – if it lasts that long! I can’t seem to keep a jar in the house! It seems to disappear just as soon as it’s made!

Easy Peaches & Cream Danish

Mise En Place – Danish
Ingredients
  • 1 package of frozen phyllo dough (pastry dough), thawed
  • 1/2 cup Humble Peach Jam
  • 5 average sized slices of peaches, sliced thinner
  • 8oz block of cream cheese, removed from package, softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract. 1/4 tsp vanilla, divided
  • 1/2 cup confectioners sugar
  • 4 TBSP warm water
Instructions

Step 1: In a medium sized mixing bowl, mix together cream cheese, sugar and vanilla, mix until smooth – I’m using my food processor out of simplicity for me. Use whatever is comfortable for you.

Step 2: Once phyllo dough has thawed completely, roll out on clean dry surface and cut to desired size.

I completely forgot to take photos of this step tonight, y’all so please, enjoy my very amateur infographic below. This is one of my favorite ways to cut & fold my danish:

Step 1: Fold along dotted line

Step 2: Rotate so that the right angle is at the top and the fold is on the bottom.

Step 3: Cut along dotted lines making sure to leave a gap between the lines at the top angle and then unfold.

Step 4: Fold the left outer corner to the right inner corner, and the right outer corner to the left inner corner.

Step 3: Move to parchment prepared sheet pan, egg wash the top surface and spoon (or pipe) cream cheese filling on surface of dough, layer on peach jam and top with thin peach slices. – I actually did this step before doing the 2nd step because I was just so EXCITED about these danishes and got a little ahead of myself.

Step 4: Bake in preheated oven at 350*F for 10-12 minutes or until golden brown. Remove from oven and allow to cool slightly.

Step 5: While the danish are cooling, make the icing: in a small bowl, combine vanilla, 2 TBSP warm water and 1/2 cup confectioners sugar, stir and add 1 additional TBSP of warm water until you’ve reached desired consistency. **I used the leftover cream cheese filling and just added the confectioners sugar, water and vanilla.** Drizzle over cooled danish and serve.

I hope you’ve enjoyed today’s recipe and the adventure of the last ten days with me in our Kitchen Quarantine! I certainly have enjoyed the challenge and the opportunity to share some of the comforts of my home with you, thus far. I am really looking forward to my next challenge though!
