KQ: Day Seven
Hawaiian Rolls & Pork BBQ Sliders with Humble Que© BBQ Sauce
I want y’all to know how much I love my sisters. This pandemic has us all sheltering in place and I miss seeing them. I miss eating lunch with them or just grabbing a cup of coffee. Today, I have had the pleasure of spending the entire day socially distanced “with” my sisters as I baked these rolls, made this sauce and used my Ninja Foodi to make the easiest shredded pork BBQ sliders ever! Enjoy!
Hawaiian Rolls Ingredients
- 6 cups all-purpose flour, plus an additional ½ cup flour, divided
- 3 eggs
- 1 1/2 cups pineapple juice, brought to a boil and allowed to return to room temperature
- ½ cup warm water **If it’s too hot it will kill your yeast**
- ¾ cup sugar & ½ tsp sugar, divided
- ½ teaspoon ginger
- 1 teaspoon vanilla
- 4 ½ teaspoons (1 1/2 TBSP) active dry yeast
- 1 stick (1/2 cup) unsalted butter, melted
- ADDITIONAL ¼ cup pineapple juice room temp.
Instructions
Step 1: In a small bowl, combine ½ cup warm water, ½ tsp sugar and yeast. Set aside and allow to bloom for 5 minutes.
Step 2: In a separate small bowl, beat your 3 eggs. Add the 1 1/2 cups pineapple juice, sugar, ginger, vanilla, and melted butter.
Step 3: Measure 3 cups of the flour into a large bowl. Stir in your yeast mixture and the egg mixture until well-combined.
Step 4: Add the remaining 3 cups of flour and mix well. If it becomes too difficult to stir with a wooden spoon, just use your hands! Make sure all of the flour is well incorporated—the dough should be tacky to the touch but not overly sticky. If it appears too wet, sprinkle in a bit of extra flour, just a tablespoon or so at a time. Cover your bowl with a clean kitchen towel and set it in a warm place to rise and double in size for 1 hour (or 30-45 minute proofer**) **SEE SUGGESTION BELOW FOR TURNING YOUR OVEN INTO A PROOFER TO MINIMIZE YOUR PROOF TIME**
Step 5: Prepare 12x10x2in pan, spray with baking spray and line bottom of pan with parchment. Remove your dough from the bowl and knead in an additional ½ cup of flour. Be sure to incorporate the entire ½ cup evenly throughout the dough.
Divide dough into equally weighted 2 ounce portions, roll into a ball & while making sure to keep any “seal” to the bottom, place in parchment lined pan. Cover and set in a warm place to rise for an additional hour, or until the dough doubles in size. **SEE SUGGESTION BELOW FOR TURNING YOUR OVEN INTO A PROOFER TO MINIMIZE YOUR PROOF TIME**
Bake at 350*F for 25 to 30 minutes, or until golden brown. Mix melted butter and ¼ cup of pineapple juice, brush tops with mixture, and serve warm.
Humble Que© – BBQ Sauce
Humble Que Sauce Ingredients
- 2 cups classic ketchup
- 1/2 cup Heinz worchestershire sauce
- 1/2 cup dark brown sugar
- 1/4 cup apple cider vinegar
- 1/8 teaspoon ground cayanne
- 2 teaspoons ground mustard
- 2 teaspoons Humble Spice Blend©
- 3 TBSP Honey *optional*
Humble Spice Blend©
- 2 TBSP Table Salt
- 2 TBSP Black Pepper
- 2 TBSP Onion Powder
- 2 TBSP Garlic Powder
- 1/2 tsp Cayanne
Instructions
Step 1: In a saucepan on medium heat combine ketchup, dark brown sugar, worchestershire sauce, apple cider vinegar and honey (optional – I did not use honey this time). Mix until thoroughly combined.
Step 2: Whisk in spices and allow to simmer covered on low for 10 minutes, stirring occasionally.
Step 3: Remove from heat and cool to room temperature and bottle. Refrigerate for up to 2 weeks.
Shredded BBQ Pork
Shredded BBQ Pork Ingredients
- 2 pounds pork (I used pork loin – you can use whatever cut you like)
- 1 can of cubed pineapple and the juice separated but reserved
- 2 TBSP Humble Spice Blend
- 2 cups Humble Que Sauce
Instructions
Step 1: Place pork cut in Ninja Foodi, pour in 1 cup of reserved pineapple juice and 1/4 cup cubed pineapple, set pressure cooker to HIGH for 10 minutes, allow to naturally release pressure for 5-10 minutes more depending on the thickness of your cut.
Step 2: Drain liquid from the pork and put pork in separate mixing bowl. Shred pork, I used a hand mixer to do this, use whatever you’re comfortable using.
Step 3: Return shredded pork back to the Ninja Foodi and set Foodie to sear/saute setting on low, pour Humble Que Sauce over it and stir. Allow to simmer for 10 minutes stirring occasionally. Serve hot.

How to turn your oven into a PROOF BOX:
I have a proof setting on my oven so I use it to speed up the proofing process. You can turn any oven into a proofer though. Just follow these steps:
- Preheat oven to 350*F.
- When it’s done preheating, turn off the oven.
- Working quickly so as not to let the heat out of the oven: Place a pan of hot water in the oven on the bottom rack and set your bowl of dough covered with a towel on the top rack and close the oven door.
- Be sure not to open the door for any reason. This will trap the heat inside allowing the water to heat and essentially steam to create a “proof box”.
