KQ: Day Nine
Chicken Marsala served with Garlic Mashed Potatoes and Steamed Broccoli
It’s days like today that I’m thankful we live so close to our family members. We have a web of family all around us and when we needed them, they came. On a day like today, when comfort is all I longed for, this quick and easy meal brought me solace in a storm no one else could see.
Ingredients
- 2 large chicken breasts
- 3 cups broccoli florets
- 6 small/medium russet potatoes
- 3 TBSP unsalted butter; 4 TBSP unsalted butter, divided
- 1 cup Marsala cooking wine
- 1 cup chicken stock
- 1 cup canned mushrooms
- 1/2 cup AP flour, for dredge
- 12-15 cloves of garlic
- 1/4 cup olive oil
- 1/3 cup mayonnaise
- 1/2 cup heavy cream
- 1/2 medium sized red onion, diced
- Humble Spice Blend, to taste, (find recipe here)
Instructions
Step 1: Set Ninja Foodi (or Instant Pot) to sear/saute on HIGH, add 3 TBSP of olive oil, 3 TBSP butter & 4 cloves of garlic.
Step 2: Season chicken breasts with Humble Spice Blend and lightly dredge in flour.
Step 3: Place chicken breasts in the pot top side (or presentation side) down. Brown on both sides.
Step 4: Add marsala cooking wine, chicken stock, mushrooms, and red onion. Set to pressure cook on HIGH for 10 mins.
Step 5: While the chicken is pressure cooking, peel and rough-dice your potatoes. Place in pot on stove with salt to boil, and toss broccoli in olive oil and Humble Spice Blend, set aside.
Step 6: When pressure cooker is done, quick release the pressure and add raised rack to the pot, arrange broccoli on rack, set pressure cooker to steam setting and steam for 2-3 minutes.
Step 7: Drain potatoes, add Humble Spice Blend, heavy cream, 4 TBSP unsalted butter, and using a hand mixer blend until you’ve reached desired consistency. (Some people like creamy potatoes, some like lumps, I prefer somewhere in between).
Step 8: Plate it: arrange potatoes, in the center of the plate, add broccoli and shingle chicken breast against potatoes, top with 2oz of sauce and mushrooms.
Step 10: Pour yourself a glass of wine, be sure to take a photo for the ‘Gram, find yourself a comfy spot and dive in!
Today, a little time in the kitchen alone doing my thing and catching up on Grey’s Anatomy while I devoured my culinary creation was all I needed to get back in a healthy headspace. But it’s not that easy for a lot of people. So now, I want to take a minute and discuss the importance of self-care. With all that is happening in the world today, one can easily sink into a state of unrest, high anxiety, and the deepest of depressions. It’s scary to be facing all of this alone, even if you’re in good company. Keep a close eye on your friends and loved ones with mental health disorders. We are not okay right now and although we can’t be with each other physically, it’s still important for us to know that we have people out there that love us, care for us, our wellbeing and our state of mind.
