KQ: Day Four
Kale Chips & Lemon Dill Dipping Sauce
Use your Ninja Foodi or Air Fryer to make these three different types of kale chips: ranch, sea salt and pepper and chili lime.
Have you noticed the “Quarantine 15” creeping up on you? Have you and your couch become one? I bet you’re snacking all the time. I certainly have been. Working from home is great and all; but now I’m just a few steps from the kitchen. Are you trying on your jeans every day… Ya know… just to make sure they still fit? Nope. Me neither. You’re in your comfy pants and you’re eating whenever (and whatever) you want. Me too! You probably don’t even know what day it is do you? Well… just so you know, ya hot mess, today is Tuesday, April 7th, 2020. Now, let’s tackle those poor snack choices we’ve been making.
Kale is a great source of vitamins, folic acid & nutrients! Also, they were the only thing left when I went searching for collard greens! So, let’s swap out those carb-loaded potato chips for this quick and easy keto-friendly crunchy snack instead!
Kale Chips Ingredients
- 2 Large Bundles of Curly Kale
- 1 Ranch Seasoning Pack
- Mixture of Coarse Sea Salt and Black Pepper
- 3 Tablespoons of Tajin – Chili Lime Seasoning
- Olive Oil – as needed
Kale Chips Instructions
Step 1: Wash kale thoroughly and pat dry with tea towel, leave to set out to dry completely before moving on to second step
Step 2: Tear stalks from the leaves. Leave the leaves in larger pieces, they will shrink during the cooking process. Using your hands, lightly coat the kale in olive oil and season.
Step 3: Place in air fryer and set temp to 390*F for 2 minutes. Toss and air fry again for 2 more minutes. Toss a 3rd time and air fry once more for 2-3 minutes or until crisp.
Kale chips are best enjoyed right away. If left to sit, they will get a little soft. You can air fry them again for another 2 minutes and they will crisp right up! This Lemon Dill Dip I made is a great keto friendly dip too! It’s also great on salads!
Lemon Dill Dip Ingredients
- 1 cup heavy cream
- 1/2 cup mayonnaise
- 3 small sprigs of dill
- Sea Salt & Pepper to taste
- Zest of 1 lemon
- Juice of 1 lemon
Lemon Dill Dip Instructions
Step 1: Place all ingredients except lemon juice in a clean food processor and pulse to a thickened and creamy consistency while slowly drizzling in the lemon juice.
Step 2: Place in airtight container and cool until ready for use.
How about movement? Have you even gotten out of bed yet? It sure was hard for me to put my feet on the floor this morning!
Let’s get out and get moving! Staying active is still important. Go for a walk. Walk the dogs a little longer than you normally do. Work on planting a garden! You can grow your own kale for more chips! Get some yard work done or start a new backyard project! The kids and I went for a walk/bike ride with the dogs after lunch today! How ever you do it, get up and get outside! We’re all a bit of a mess right now don’t forget to take care of yourself.
