Caramel Apple Crumb Cheesecake

This melt in your mouth, light, fluffy, creamy & smooth texture is what all your cheesecake dreams are made of!

My favorite dessert growing up was always apple pie. There’s a nostalgia with apple and cinnamon that I can’t quite attribute to any one specific childhood memory; but it brings me the comforts of home. This recipe is a direct reflection of just that. Comfort.

Step 1: The Crust

Crust Ingredients
  • 1 cup of graham cracker crumbs (about 12-13 crackers, finely pulsed in processor)
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 1 tsp cinnamon
  • 1/2 tsp Kosher salt; coarse
Crust Instructions

Step 1: Combine all dry ingredients in small mixing bowl and mix well; Add melted butter, mix well; mixture should look like damp sand.

Step 2: Add crust mixture to a 9in springform pan.

Step 3: Using a measuring cup or something with a flat side and bottom, smooth out the surface of the crust while pressing it to the pan.

Step 4: Refrigerate while you work on Step 2.

Step 2: The Cheesecake Filling

Filling Ingredients
  • 4 – 8oz blocks of cream cheese, softened
  • 3 eggs
  • 2 TBSP of AP Flour
  • 1/4 cup caramel sauce
  • 2 tsp vanilla
  • 1/4 cup sour cream
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
Filling Instructions

Step 1: Cream together the cream cheese, sugar and caramel sauce; be sure to scrape down the sides of the bowl halfway through this step; whisk until smooth.

Step 2: Add the eggs, one egg at a time, allowing each egg to fully incorporate before adding the next; whisk until smooth.

Step 3: Add sour cream and vanilla; whisk until smooth.

Step 4: Add flour, cinnamon and salt; whisk until smooth.

Step 5: Pour mixture into cooled crust, smooth out the surface and set aside.

Step 3: The Toppings

Toppings Ingredients
  • 4 TBSP softened, unsalted butter
  • 1/4 cup AP flour
  • 1/4 cup dry oats
  • 1/4 cup dark brown sugar (light brown will also work)
  • 1 tsp cinnamon
  • 1 *PINCH* of nutmeg
  • 1/2 tsp Kosher salt, coarse
  • 1 cup diced Granny Smith apple
Toppings Instructions

Step 1: In a small mixing bowl, combine dry ingredients

Step 2: Add softened butter 1 TBSP at a time to fully incorporate it into the dry ingredients.

Step 3: Topping should be crumbly like damp/wet sand.

Step 4: Layer topping with apples on top of the cheesecake filling.

Step 4: Bake It!

Instructions

Step 1: Wrap the bottom of the pan in foil and set inside another larger pan for a water bath.

Step 2: Place the pan inside the oven and pour the hot water into the pan; bake at 325F for 1.5 hours.

Step 3: Once 1.5 hrs is up, turn off the oven and crack the oven door, allow cheesecake to cool in the oven for an additional hour.

Step 4: Refrigerate overnight; remove springform ring and place on cake stand; top with caramel sauce, slice & plate! Enjoy!

Now, if you’ll excuse me, I have a slice of cheesecake and cup of coffee calling my name.
